Serves 2-4
Ingredients:
1 Tbsp olive oil
6 Good quality sausages (low fat)
1 Onion - finely chopped
1 Garlic clove - chopped
1 Red Pepper
400g Can chopped tomatoes
1 Tsp oregano
350g (12oz) Penne or rigatoni pasta
1 Tbsp red pesto
Equipment:
Tablespoon
Large saucepan
Sharp knife
Chopping board
Non-stick frying pan
Tin opener
Teaspoon
Measuring scales
Method:
Dry fry the sausages in the non-stick frying pan for about 8 minutes until brown
Drain off any fat
Remove from the pan and cut into 2.5cm (1 inch) pieces
Fry onion, pepper and garlic in the oil for 5 minutes, add tomatoes, sausages and oregano, season to taste
Cook pasta in boiling water for 10-12 minutes or just till tender
When the sauce has thickened stir in the pesto, drain the pasta and return to the pan
Stir in the sauce and serve immediately
