Corned Beef Hash
Serves 2-3
INGREDIENTS:
1 Tbsp oil
1 Large onion – chopped
750g (1½lb) Potatoes – cut in chunks
1 Large carrot - diced
300ml (½pt) Beef stock
1 x 325g (11oz) Can corned beef – cut in chunks
2 tsp Dried parsley (optional)
1tbsp Worcester sauce
EQUIPMENT:
Sharp knife
Shallow pan
Spatula
Measuring jug
Spoon
Chopping board
Wooden spoon
Tablespoon
METHOD:
Heat oil in a large pan and add onion. Cook gently, stirring occasionally, for a few minutes until softened
Add potato and carrot and stir
Pour in stock and season to taste
Add 1 tbsp Worcester sauce and parsley, if used. Simmer for 10-15 minutes until potatoes are tender and stock is absorbed
Gently stir in corned beef and heat to warm through
Put pan under hot grill 7cm (3”) from heat to brown top
Serve with broccoli or other vegetables
