Corn Fritters
Serves 4 excellent dish for both children and adults
Corn fritters
This is really easy and very lovely:
Ingredients
Plain flour
1 egg
Milk and water
Large tin of sweet corn
Salt & pepper to season
Equipment
Large mixing bowl
Hand whisk
Frying pan
Method
To make the batter;
Mix and whisk
Plain flour
1 egg
Milk & a little water
Leave to sit for 30 minutes.
To make the fritters
Rinse and drain a tin of sweet corn.
Melt some butter in a frying pan. You can use olive oil or butter depending on what you prefer.
Fill a spoon with sweet corn dip in the batter.
Pour the mixture in to the hot frying pan.
Turn the fritter over when golden brown.
Once cooked service with salad.
Serving options
Mango
Scoop out a mango and heat in a pot, add a good bit of lime. Blend until smooth and server on top of the fritters.
This is lovely with roast potatoes and salad.
