Beetroot and pear warm salad 

Ok folks this is a wonderful salad that is fit for any occasion, but first its best to know what you are eating. Here is some information about this wonder food from http://www.lovebeetroot.co.uk/

Beetroot benefits 

Beetroot contains betaine, a substance that relaxes the mind and is used to treat depression. 

It also contains trytophan (also found in chocolate!) which contributes to a sense of well being. 

Keep calm 

Don’t be alarmed, if after eating beetroot, there are pink side effects! It’s the red pigment in beetroot which passes harmlessly through the digestive system. 

Serves 4

Ingredients

This is for a main course to feed 4 people. If you want to service this salad as a starter simply use half the amount. 

8 medium fresh beetroots 

4 pears 

Rocket leaves 

Soft goats cheese 

Balsamic vinegar 

Salad dressing (optional) 

Roasted walnuts 

Options for main course 

Mashed potatoes 

Roasted potatoes

Medium roasting tray 

Method  

Start with the beetroot

Wash the beets and place them in a pot of warm water. Do not top or tail them or break the skin, this will let all the amazing colour run out during the cooking process. Let them boil until they are soft or the skin peels off. 

When the beets are soft, pull off the skins. If the beets are older you will need to peel the skin off with a knife or peeler. 

Cut the beetroots in 4 and place them on the roasting try, sprinkle with olive oil and place in a hot oven.  

Once the beets are crispy (about 20-30 mins)  peel the pears and cut into quarters 

Add the pears and walnuts to the roasting try (try to keep them separate from the beets). 

Leave for about 10 minutes, but keep an eye on the Walnuts they can burn easily. 

To prep the rest of the dish: 

Place the rocket on the plate 

Arrange the beets, walnuts & pears on the rocket and add the goats cheese and potato. 

You can dress to taste.  

This dish is really tasty and very healthy, enjoy it.
