Ingredients: Makes 10 -12
125g (5 oz) self raising flour
50g (2oz) wholemeal flour
3 tsp baking powder
50g (2oz) golden granulated sugar
100g (4oz) oats
2 eggs – beaten
200ml semi skimmed milk
75g (3oz) margarine
1 cooking apple, peeled, cored & finely diced
2 large ripe bananas, mashed
1 tsp ground cinnamon
EQUIPMENT

Mixing bowl
Weighing scales

Muffin tin
Oven gloves
Peeler
Muffin cases
Preheat the oven to 200ºC/400ºF/Gas mark 6
Place deep paper cases in a muffin tin
Sieve the flours, baking powder and cinnamon into a mixing bowl
Add the sugar and the oats (reserving 1 tbsp). Then add in the apples
Beat the eggs and milk together add the banana and melted margarine and pour into the dry ingredients. Fold together. (Do not over mix)
Spoon the mixture into the paper cases and sprinkle with a little oats over the top. Bake in the oven for 15 – 20 minutes until golden
